A Peacotum is a trifecta of flavors bred into one perfectly gilded, blushed beauty. If you’re a fan of stone fruit and the sight of apricots, peaches and plums romance your palate then you must try this new hybrid. Don’t worry, this isn’t an evil Genetically Modified Organism. Peacotums are a clever cross between a Peach, Apricot and Plum. Peacotums have an eggshell finish skin from it’s plum and apricot forbears with the flesh texture and color balanced between the two. Still trying to find the peach’s contribution to this new fruit. They’re a really delicious fruit with balanced sweetness and acid much like you’d find in a good apricot. I found this specimen at Tachella Family Farms in Brentwood. The peacotum has a short harvest season in Northern California from mid June to mid July.
