Homemade Granola

This recipe is inspired by my father who has always been the official granola chef in our family.
This is one of the easiest recipes for fresh homemade granola. It makes a delicious healthy breakfast cereal or a snack. Try it over a bowl of fresh fruit with a dollop of Greek Yogurt. This recipe is easily adapted to your taste with the addition or deletion of sweeteners, spices, nuts, seeds or dried fruits.

Ingredients
- 16 Cups (84 Oz.) of Rolled Oats (Old Fashioned)
- 1 Cup of Rice Bran Oil (or Canola, Grape Seed or Peanut Oil)
- 1 Cup of Warm Honey (or maple, rice or agave syrup)
- 2 Cups of Chopped Walnut (or Pecans, Almonds or Peanuts)
- 2 Tablespoons of Cinnamon
- 1 Teaspoon of Ground Nutmeg
- 1 Teaspoon of Ground Ginger
- 2 Cups of Raisins (White, Red or Currants)
Instructions
- Preheat oven to 400 degrees fahrenheit
- Into a large bowl, combine all of the dry ingredients and mix until thoroughly combined.
- Add the oil and warm honey.
- Mix thoroughly with a rubber spatula or wooden spoon.
- Line two large cookie sheets with parchment paper or tin foil.
- Divide the mixture between the two cookie sheets and spread evenly.
- Place in the oven for 15 minutes, then turn the oats over with a spatula to insure even browning. Cook for another 15 minutes and remove from the oven. Toss one cup of raisins on top of each cookie sheet and let cool to room temperature.
- Granola will be crunchy and golden. Remove from cookie sheets and break into smaller pieces, store in ziploc freezer bags.
Notes
- Feel free to add dried fruit to your taste. You can add dried apples, pineapple, apricots, peaches, nectarines, cherries, cranberries, figs or kiwis. Simply chop into pieces no more than 1/4 dice.
- You can also add sesame, sunflower, flax seed or hemp nuts as long as it is added after the oats are removed from the oven, as these are very heat sensitive and will burn in the oven.
- Granola will keep for 3 months in the cupboard or in the freezer for 6 months.
