Heirloom Tomato Caprese Salad

Fall is upon us, accompanied by those warm days and cool nights. I love how the sun tilts down on us and the leaves begin to turn gold, red and purple. The tomatoes are in full flush, in a rainbow of colors and flavors from the sweet dark brown Paul Robeson’s to those Riesling flavored pale yellow Pineapple cherry tomatoes. I end up at the farm every week during this season as we wind up the summer growing season and prepare for the slow wind down into winter.
Tis the season for an Heirloom Caprese Salad made famous by Italians from the Island of Capri, just 90 minutes south of Naples by ferry.
This is a simple salad features local heirloom tomatoes and fresh basil at the peak of ripeness.

Ingredients
- 3 Large Fresh Heirloom Tomatoes (assorted colors are great)
- 2 Large Fresh Mozzarella Balls (or Mozzarella di Bufala)
- 12 - 15 Whole Fresh Basil Leaves plus flowers and buds for garnish
- ¼ Cup of Extra Virgin Olive Oil
- ½ Teaspoon of Sea Salt
Instructions
- Core the tomatoes
Slice the following into 3/8 to ½ inch slices
- • Tomatoes
- • Fresh Mozzarella or Buffalo Mozzarella
- Place six slices of tomato on a platter.
- Place a slice of fresh mozzarella on each slice of tomato.
- Place a basil leaf on top of each stack.
- Repeat with a slice of tomato and then another slice of mozzarella.
- Top each stack with a fresh basil leaf.
- Drizzle stacks with extra virgin olive oil and sprinkle with sea salt.
- Garnish Platter with basil buds and flowers.
- Serve at room temperature with your favorite floral white wine.
Notes
- If you have access to fresh yellow peaches, add a slice to each stack. It’s magical how the sweetness of the peach mingles with the acidity of the tomatoes.
