Roasted Apple and Pear Crisp

Ingredients
- 3 Cups Granola (see my recipe)
- 5 Hard Crunchy Sweet Apples (Galas, Pink Ladies, Delicious) Peeled, Cored, Cut into Eighths
- 3 Firm Sweet Pears Peeled, Cored and cut into roughly 1/2" pieces
- 1 Tablespoon of ground Cinnamon
- 1 Tablespoon of ground Ginger
- 1 Tablespoon of real Vanilla or Vanilla Paste
- 1 Tablespoon of Butter
- Cinnamon Apple Sauce
- 4 Cups of Apple Cider
- 2 Cinnamon Sticks
- 3 Tablespoons of Light Brown Sugar
Instructions
- Preheat oven to 400 degrees Fahrenheit
- Grease a 9" X 13" pyrex baking dish with butter
- For the Cinnamon Apple Sauce
- Into a large saucepan, add the 4 cups of apple cider, two cinnamon sticks and brown sugar and bring to a boil on high then reduce to a simmer until you have reduced the cider to 1 cup. This will take approximately 1 hour stirring occasionally.
- Peel, Core and Chop Apples and Pears and add to a large mixing bowl.
- Add the Cinnamon, Ginger and Vanilla and toss until the apples are fully coated with spices and vanilla.
- Pour the fruit into the greased pyrex baking dish and place in the oven to roast for 30 minutes, or until the fruit is soft but not apple sauce. Remove from the oven.
- Serve a half cup of roasted apples and pears sprinkled with a quarter cup sprinkling of granola topped with a drizzle of hot cinnamon apple sauce topped with a dollop of vanilla greek yogurt or whipped cream.
Notes
- I like to keep the roasted apples and pears separate from the granola topping because it keeps the topping crunchy. Simply warm the fruit and sauce before serving. The combination of the spiced roasted fruit topped with granola and cinnamon apple sauce make for a perfect fall dessert everyone will love. Try this recipe and sprinkling some dried cranberries onto the apples and pears as they come of the oven for a sweet-tart treat.
