Caesar Salad

Everyone loves this classic salad with crispy Romaine lettuce laced with a salty, garlic sauce gilded with Parmesano Reggiano cheese and crunchy homemade croutons.
I was recently in Thailand and a dear friend and fellow cook Mannee asked me for this recipe. This one is for you Mannee and all my students who loved it so.

Ingredients
- 1/2 Baguette (any bread will do)
- 3/4 Cup Extra Virgin Olive Oil
- 3 Heads of Romaine Lettuce
- 6 Anchovy Filets
- 1 Egg
- 2 Garlic Cloves
- 1/2 Fresh Lemon
- 6 Tablespoons of grated Parmesan or Romano Cheese
- 1/2 Teaspoon of Black Pepper
Instructions
- Preheat oven to 400 degrees fahrenheit
- Cut baguette into 1/2 cubes
- Drizzle 1/4 Cup of Extra Virgin Olive Oil onto a cookie sheet
- Add the bread cubes and toss to coat with olive oil
- Place in the oven for 7 minutes then turn using a spatula and return to oven for another 7 minutes until golden brown and remove to cool.
- Thoroughly wash and dry the Romaine lettuce and cut into 1 inch strips and place in a large salad bowl.
- Dressing
To your blender add the following
- Crushed and chopped Garlic cloves
- 6 Anchovy Filets
- Juice from 1/2 Fresh Lemon
- 1/2 Teaspoon Black Pepper
- 1 raw Egg
- Using a blender, food processor or stick blender process to a smooth paste
- With the blender on the lowest setting drizzle in the remaining 1/2 cup of Olive Oil
- Dress the romaine lettuce with the Caesar dressing and toss in the croutons and grated cheese and toss once again.
- Serve and enjoy!
Notes
- This salad is terrific on it's own for lunch or dinner, you can also add a protein like: grilled chicken, beef, fish, tofu or nuts. Optionally, some people like to add capers to their dressing. I topped mine with a few sun dried cherry tomatoes.
